Pickled Carrots (Kim's Recipe)

RECIPE PER PINT

Anna's soup (garlic)

8 cups chicken stock
3 cups good bread diced, processed into pieces no more than 1/2 inch.
1/2 cup olive oil
1 whole head garlic peeled and minced
salt to taste
1 teaspoon paprika
4 eggs

 

Heat the stock.  In a frying pan, heat the olive oil, then toss in the bread crumbs and stir until browned.  Stir in the paprika and garlic and saute a little longer until the garlic aroma is released.  Scrape into the simmering stock, washing out the pan to get every bit of flavour.  Simmer for 20 minutes.

 

Mom's Lasagna

(with my modifications)

19oz stewed tomatoes (w italian seasonings)
5.5oz tom paste
1lb ground beef
2 cloves garlic
1/2 lb mozzarella cheese
8 oz cottage cheese or 8-12 oz Ricotta
1 1/2 to 2 tsp oregano (used frozen fresh)
8 oz noodles (cook ahead of time)

Brown beef.  Add tomatoes, paste, oregano, and garlic salt to make sauce.

Alfredo Sauce

I haven't made this one for years, but it was good when I did make it.

 

1/4 cup good white wine
1 pint (500ml) Cream (won't work with creammilk)
1/3 cup grated parmesan cheese

1/3 cup fine diced sweet onion
two cloves fresh chopped garlic
fresh ground black pepper to taste
fresh ground white pepper to taste

 

Sweat onions in clarified butter or olive oil
Add garlic
(deglaze with wine?)
Add Cream
bring to a boil
remove from heat.
add parmesan cheese
reduce sauce

Onion Ring Batter

1/2 cup beer
1/2 cup soda water
1 tbsp oil
1 egg white
1/2 tsp cayenne
1 tsp salt
1 cup flour
1/4 tsp mustard powder
1/2 tsp onion powder

 

This batter worked well for deep fried onion rings.

Baked Oatmeal

3 cups Oatmeal
3/4 cup Brown Sugar
1/2 cup Margarine or oil
2 Eggs
2 cups Milk
2 tsp Baking Powder
1 tsp salt

 

Mix all together into a 13x9 pan. Bake at 375F for 25 minutes. 

Chicken Soup

I had some bones and skins left over from the stirfry, (4 thighs worth) so I covered them with about 5 cups of water and boiled them very gently for about 4 hours. Later in the boil, I removed the skins, scraped the meat off the bones, (try to remove the cartilage) and added salt, 4 peppercorns, one very large carrot, one onion, two small bay leaves, 1/2tsp of MSG, and several sprigs of parsley. I kept adding salt to taste, ending up at about 2 tsp. Finally, I added 1/8tsp five spice. This soup tastes wonderful. (The five spice makes it!) I wish I had celery to add...

Today's stirfry

This one was good enough to write down. 

one onion, cut in wedges.
half each green pepper, red pepper cut into pieces
one head of broccoli florets (no big stems)
splash with sesame oil. 
squeeze juice of one lime
shake of MSG and salt to taste
(soya sauce added while frying)

two cloves garlic, diced
ginger, cut into tiny sticks

four chicken thighs cut into pieces
marinated in oyster sauce (lady in the boat -- always!) and a shake of chicken oxo.

Bread Maker Pizza Dough

I have used this recipe many times to make pizza dough in my bread maker.

 1 cup + 2 tbsp water
 2 tbsp olive oil
 1 tsp salt
 2 tbsp sugar
 3 cups flour
 2 tsp yeast

Follow usual breadmaker procedure... liquids first, then dry, then yeast.  My breadmaker has a "dough" setting which I used.  At the end of the cycle, the dough is ready to punch down and shape into pizza pans.  This recipe was enough for two 14" pans. 

Rachel's Chicken

I just winged this today, and it was good, so here's my recipe. 

Pound chicken breast flat.  Place baby spinach and feta cheese in middle.  fold over.  Coat with egg/milk mixture.  Dredge in cornmeal mixed with salt and pepper.  Bake at 375F until chicken's internal temperature is 170F.  About 30 minutes.

Serve with pasta and alfredo sauce.
